Here is my favorite Greek Salad Recipe. Very traditional and very authentic! Can be made vegan.

 4  ripe tomatoes
 1  long English cucumber
 1  red onion
 1  green pepper
 Feta Cheese (to taste) - or can use a vegan cheese substitute or omit altogether
 Kalamata olives
 ½ cup olive oil
 3 tbsp red wine vinegar (or more - can use up to 5 tbsp to taste)
 1 tsp dried oregano leaves
 salt and pepper (to taste)

Cut the vegetables into slices and place them in a salad bowl.

Add the olives, oregano, feta cheese, olive oil and red wine vinegar.

Mix to combine.

Enjoy! (Can be refrigerated to serve later as well - just give it a stir before serving.)
